Happy 2009! A cold day in the Adirondacks today - about 10F was as high as the temp climbed but my house...90F in the kitchen with the woodstove going. I almost passed out from the heat and had to keep opening doors and windows and walking out on the porch. I had stuff cooking n the stovetop and the oven going too to make my chicken pot pie - a dish my Mom used to make for us. It came out quite comparable I must say. Easy as pie to make:
Stew a chicken with some onion to make lots of broth.
When meat falls off bone, pick all the meat off and put back in pot. I think I left the rest of the carcass in bag on porch to draw coyotes tonight - oops.
Peel as much potatoes and carrots as you need (actually my 93 year old dad peeled the potatoes again) put the carrots in first to cook for 20-30 min. add the potatoes and I threw in some peas too (they look a little unappetizing in the picture I took but hey they were good). Once all that is cooked and simmering well, make it turn into gravy - mix or flour/water your choice. Then I mixed up a double batch of Jiffy Baking Mix biscuits and spooned that onto the boiling stew. Now you have two choices here, I heated the oven to 400 and put the pot in the oven to cook the biscuits. You can cover the pot and cook for 15-20 min and you will have dumplings on your stew instead of biscuits. But for pot pie I wanted a nicely brown biscuit topping. It was very yummy.
My daughter and her girls came over - we ate well and did I take any pictures? No, and we celebrated our belated Christmas today. But wait, I did take one picture. Of my dang pot pie. Oh well. Happy New Year. I did get beautiful pics of my grandgirls in a nice frame as one of my gifts. They both took a great school pic this year.
We played with their Wii after supper. I could not get those movements going and got beat badly by little kids. My dog wanted to play too and kept barking and jumping on me. Maybe that's why I lost. It's Coco's fault. I think someone should invent Wii games for dogs. They would make a mint. You watch...it's the next big thing. You read it here.
